Khichdi [खिचड़ी] 


 
Khichdi, is a South Asian dish which is made of rice and lentils (दाल), but there are also some other variations include bajra and mung dal Khichdi. In Indian culture, it is also considered one of the first solid foods that babies eat. Hindus, who avoid eating grains during fasting, eat Sabudana Khichadi made from sago. Khichdi is a salty porridge. Dalia is another similar sweet porridge made from the crushed wheat or barley mixed with sugar and milk.
The term khichdi is derived from Sanskrit khiccā [खिच्चा], a dish of rice and legumes.

Khichdi is prepared by using rice, pulses, coarse cereals spices and vegetables also. Which represent unity in diversity. That's why Khichdi is known as India's Super Food. Khichdi symbolizes India's great culture of unity in diversity at its best. Therefore, Khichdi has been selected the Brand India Food.

Khichdi as a health Remedy

The most common lentil used to make khichdi is Moong Dal or skinned & spthlit green gram.
According to  Ayurveda, moong dal is Tridoshic in nature can balance all the three doshas- vata, pitta & kapha in body. it is one of the lentils that can balance any kind of disturbances by naturally detoxing the body.
A basic ayurvedic khichdi is made with just rice, moong dal , cumin, turmeric, ginger, salt and pure cow ghee. ingredients like black pepper or any other spice & veggies are optionally used.

How do i make khichdi ?

  1. Most of times I make khichdi with minimum spices i.e cumin alone. However you can also use bay leaf, cinnamon, cloves ,cardamoms & black pepper .
  2. I usally make this with just a small onion, tomatoes & carrots as preparing other veggies take some time. However you can also add your favorite veggies like peas, beans, potatoes & any other veggies you like. it's all about the flavor of veggies you like.
  3. If you are making khichdi for someone recovering from illness, then skip spices & add a wide variety of veggies which are suggested by Doctor. 
  4. I use hand pound rice as this is what we are currently eating. Sometimes I also make khichdi with whole grains like brown rice, daliya, steel cut oats .
  5. we usually dry roast moong dal until aromatic and store it in a jar. Use it whenever needed to make dish. This adds lots of aroma. 
This simple khichdi is super quick to make so I make it often for my lunch or diner and serve it with Curd or Pickle.
